Champion Chocolate Chunk Pumpkin Spice Cookies
16 tbls. salted butter (thatās 2 sticks)
1 1/2 cups organic cane sugar or turbinado sugar
2 eggs
1 heaping tbsp vanilla extract
Dry ingredients:
2 3/4 cups flour
1 tsp. baking soda
1/4 tsp salt, allspice, cinnamon
1/4 tsp clove or nutmeg
1/2 tsp ginger
1 tbsp turmeric
1 1/2 10oz bags Safeway Organics bittersweet 72% chocolate chunks
1/2 cup chopped walnuts if you like nuts
Yields about 4 1/2 dozen cookies (if you make the balls of dough about the size of a ping pong ball).
Set the butter out on your counter to soften up or microwave to soften if youāre in a hurry to make the dough
Whisk all dry ingredients and set aside. Put chocolate chips and walnuts into dry ingredients last, mix well.
Mix sugar and butter well in another, larger bowl until it forms a thick paste
Add eggs and vanilla, beat until itās a little fluffy
Combine dry ingredients with wet ingredients and mix until you form the cookie dough, but donāt overmix or cookies can get tough.
Let dough cool in fridge overnight, or at least 4 hours. When youāre ready to bake, preheat your oven to 350 degrees and line 2 sheet pans with parchment paper or silicone baking mats. Spoon out dough onto the pans, sprinkling sea salt to taste, cook for 13-15 minutes, and try not to eat as many cookies as I always do!
